Line an 8×8 baking dish with parchment paper. Set aside.
In a food processor, pulse the crust ingredients until blended. Pour into baking dish and press firmly to form an even bottom layer, set aside.
In a medium saucepan over medium-high heat, mix together the filling ingredients for 2-3 min, stirring constantly. Simmer for 1 minute finishing stirring. Then take off heat completely for 3 minutes, let sit, don’t stir.
Pour filling onto crust and freeze for 30 min.
In a small saucepan, melt together all of the topping ingredients, once smooth, pour into the baking dish and freeze for 4 hours to overnight (preferred).
