HEALTHY TURKEY CHILI

INGREDIENTS

  • 1-2 tbsp Avocado Oil
  • 1 lb Organic Ground Turkey 
  • 1 medium Yellow Onion
  • 1 Orange/Red Bell Pepper 
  • 1 can Black Beans
  • 1 can Kidney Beans 
  • 1 can Red Beans 
  • 1 can Corn
  • 1 28 oz. can Diced Tomatoes 
  • 1/2 cup Chicken Stock
  •  2 tbsp Chili Powder
  • 1 heaping tsp Garlic Powder 
  • 1 tsp Cumin 
  • 1/4 tsp Cayenne Pepper 
  • 1/4 tsp Chili Flakes 
  • 1/4 tsp Smoked Paprika 
  • 1/2 tsp Salt + more to taste
  • Cauliflower Tortilla Chips

    DIRECTIONS

    1. Sauté the onion and pepper on medium-high heat until they begin to soften.
    2. Add in the turkey and cook until the turkey is no longer pink. Make sure to break up the turkey while stirring. 
    3. Rinse and drain the beans/corn and add all ingredients to the Crock-Pot. Add the turkey/onion/pepper mixture and stir until combined. Cover and cook on low for 4-6 hours. 
    4. Topped with cashew mozzarella, cilantro and Cauliflower Tortilla Chips.
