Vegan Queso Dip
- Soaked cashews (2 cups cashews soaked in hot water)
- 4oz can green chilies, drained
- 1 cup coconut milk
- 2 tbsp nutritional yeast
- 1 tbsp lemon juice
- 1 cup vegetable broth
- 3 garlic cloves
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp tapioca starch
- Real Food From the Ground Up Sea Salt Cauliflower Tortilla Chips
- Diced tomatoes, for garnish
- Add all ingredients except tomatoes and chips to a blender.
- Blend on high speed until smooth.
- Add to serving bowl and garnish with diced tomatoes.
- Serve with Cauliflower Tortilla Chips and enjoy!
