Vegan Queso Dip

INGREDIENTS

  • Soaked cashews (2 cups cashews soaked in hot water)
  • 4oz can green chilies, drained
  • 1 cup coconut milk
  • 2 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • 1 cup vegetable broth
  • 3 garlic cloves
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp tapioca starch
  • Real Food From the Ground Up Sea Salt Cauliflower Tortilla Chips
  • Diced tomatoes, for garnish

DIRECTIONS

  1. Add all ingredients except tomatoes and chips to a blender.
  2. Blend on high speed until smooth.
  3. Add to serving bowl and garnish with diced tomatoes.
  4. Serve with Cauliflower Tortilla Chips and enjoy!
