In a pan with a little bit of water add spinach and blanch until wilted, drain. You can substitute fresh spinach with frozen drained spinach.
Finely dice the Jalapeño. You can keep as much or as little of the seeds you would like, depends on your spice level.
In a bowl mix together the Cream Cheese, Sour Cream, chopped Jalapeño, and Cortija Cheese. Add in the Spinach and Artichoke. Season with Salt, Pepper, and Garlic Powder. Add the pressed Garlic. Mix well and refrigerate overnight or until ready to serve.
