8-INGREDIENT SPICY GARLIC SPINACH ARTICHOKE DIP

INGREDIENTS

  • 8 oz. Cream Cheese (or non-dairy cream cheese)
  • 8 oz. Sour Cream (or non-dairy sour cream)
  • 1/2 cup Cotija Cheese or Parmesan Cheese (you can use dairy-free mozzarella or Parmesan)
  • 1 Jalapeño, finely chopped (keep some seeds for a spicy kick)
  • 3 handful of Spinach, wilted and drained (or use 1 cup frozen spinach drained)
  • 1/2 cup Artichoke, coarsely chopped
  • 1 tsp salt, add more as needed
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 4-5 garlic cloves, pressed
  • Cauliflower Potato Chips

DIRECTIONS

  1. In a pan with a little bit of water add spinach and blanch until wilted, drain. You can substitute fresh spinach with frozen drained spinach.
  2. Finely dice the Jalapeño. You can keep as much or as little of the seeds you would like, depends on your spice level.
  3. In a bowl mix together the Cream Cheese, Sour Cream, chopped Jalapeño, and Cortija Cheese. Add in the Spinach and Artichoke. Season with Salt, Pepper, and Garlic Powder. Add the pressed Garlic. Mix well and refrigerate overnight or until ready to serve. 
  4. Serve with your favorite chips or veggies!
